Quick pickled green tomatoes

You can serve it with cheese

Too many green tomatoes still on your plants? Pickle them!

Ingredients

  • green (unripe) tomatoes
  • 1 cup water
  • 1 cup apple vinegar (at least 5% acidity)
  • I tablespoon salt
  • 1 tablespoon mustard seeds
  • 1 tablespoon black pepper seeds
  • optionally fresh basil leaves

Steps

  • Boil all the ingredients
  • Place the tomatoes in the jar (the basil also if you are using it! – Place it close to the walls of the jar cause it will look beautiful!)
  • Fill the jar with the brine
  • Put it upside down
  • Store it in the fridge! I didn´t sterilize the jars, so it needs to be stored in the fridge
  • Leave it in the vinegar before opening it at least 2 weeks!
  • Eat within 4-6 months.
