Quick pickled Carrots

Ingredients

  • carrots
  • 1 cup water
  • 1 cup apple vinegar (at least 5% acidity)
  • I tablespoon salt
  • 3 tablespoons sugar
  • peppers of different color (optional)
  • chili pepper if you want to make it spicy

Alternative 1

  • 1 tablespoon mustard seeds
  • 1 tablespoon black pepper if you do not use chili pepper
  • fresh basil leaves (Do not boil them! Add them in the jar)

Alternative 2

  • dried oregano (Do not boil! Add them in the jar)
  • 1 tablespoon black pepper if you do not use chili pepper

Alternative 3

  • Cloves (Do not boil them! Add them in the jar)
  • 1 tablespoon black pepper if you do not use chili pepper

Alternative 4

  • fresh ginger
  • 1 teaspoon dried coriander (Do not boil ! Add them in the jar)
  • 1 tablespoon black pepper if you do not use chili pepper

Steps

  • Boil all the ingredients, that are supposed to be boiled
  • Place the carrots in the jar and whatever else you will be using! Chili or peppers and whatever spices! – If you use basil, place it close to the walls of the jar cause it will look beautiful!)
  • Fill the jar with the brine
  • Put it upside down
  • Store it in the fridge! I didn´t sterilize the jars, so it needs to be stored in the fridge
  • Leave it in the vinegar before opening it at least 2 weeks!
