Homemade Rock samphire or sea fennel pickled

We are lucky to have a lot in Apollon, so Stella is always preparing and we are having it for aperitivo. But of course you can use it also and cook or add it for example in a potato salad! Here is the recipe how to pickle them!

Ingredients – for 1 lt of water

  • Rock samphire
  • Vinegar – 1 cup
  • Salt – 1 tablespoon
  • Vegetable oil

Steps

  • Wash very well your rock samphire. It can contain dust and soil
  • Bring the water, the vinegar and the salt to boil and add the rock samphire
  • Let it there around 5 minutes
  • Remove it and let it cool down
  • DO NOT throw away the water. You need it
  • When the samphire is cold, put it in sterilized jars and add the mix you boiled it in.
  • Add a thick layer (approximately 2cm) of vegetable oil on top of the water/vinegar to preserve it
