greek yogurt eggless muffins with blueberries

Ingredients

  • 65g frozen Blueberries 
  • 220g All-Purpose Flour
  • 95g Yogurt – use thick or greek yogurt 
  • 85g Sugar 
  • 55g vegetable Oil 
  • 2/3 Tsp Baking Powder
  • ½ Tsp Baking Soda
  • 1 Tbsp White Vinegar 
  • 1 Pinch Salt
  • 4g Vanilla sugar
  • 20ml oat milk

Steps

  • Preheat the oven at 175 degrees Celsius
  • mix in a bowl all the dry ingredients together
  • make a hole and add the wet ingredients
  • add the berries and mix carefully
  • We divided them in 9 muffin forms
  • bake till they are golden on top. It varies the timing in each oven. But you will need probably 20-30 minutes.

We decorated them with crème fraiche and dried fliers of malva (flower that you will see all around Naxos)-but we bought those dried to be sure that are edible).
