
Ingredients (for 4 pancakes)
- egg white
- 20mL milk
- 20g oat flour (you can use whatever flour or make your own oat flour: homemade oat flour)
- 1/2teaspoon baking powder
- 1 teaspoon maple syrup or honey (optional)
- oil or butter for the pan
Steps
- Mix the milk, the flour,, the baking powder and the syrup
- Beat the egg white until it has stiff peaks
- Incorporate with a spatula the egg white inside the milk/flour mix with gentle moves
- DO NOT over-mix, cause you will lose all the air you gained with beating the egg whites. You need that your dough remains fluffy, so that your pancakes are also fluffy
- Heat a pan in medium fire and add a bit or oil or butter
- add the pancakes and once they are golden/brown on the down side, flip them and then close the lid and lower the temperature for a couple of minutes for the egg to be correctly cooked
- You can serve it with fruits, maple syrup, marmalade
