Easy aubergine tomato sauce

For pasta, rice, cannelloni, simply on bread or even for breakfast with eggs!


  • 1 onion
  • half an aubergine
  • half a can of tomato sauce – approximately 200gr
  • olive oil


  • Ad olive oil in pan and put it in medium/high temperature
  • Cut the onion in dices and add it in the pan
  • Cut the aubergine is small cubes and add it also in the pan. You might need to add olive oil
  • When the onion is transparent and cooked, add the tomato sauce
  • Add a bit of water in the can and stir the water to take advantage of the remainings also of the tomato sauce and add it in the pan
  • Let it cook a couple of minutes
  • You can add herbs also like thyme, basil or oregano
  • When you serve it, add a bit of extra olive oil
