
For pasta, rice, cannelloni, simply on bread or even for breakfast with eggs!
Ingredients
- 1 onion
- half an aubergine
- half a can of tomato sauce – approximately 200gr
- olive oil
Steps
- Ad olive oil in pan and put it in medium/high temperature
- Cut the onion in dices and add it in the pan
- Cut the aubergine is small cubes and add it also in the pan. You might need to add olive oil
- When the onion is transparent and cooked, add the tomato sauce
- Add a bit of water in the can and stir the water to take advantage of the remainings also of the tomato sauce and add it in the pan
- Let it cook a couple of minutes
- You can add herbs also like thyme, basil or oregano
- When you serve it, add a bit of extra olive oil
