Artichoke soup


  • 1 onion
  • 2 carrots
  • 1 potato
  • 2 artichokes


  • Place a pot in medium fire with a bit of olive oil
  • Cut the onion
  • Cook the onion till transparent
  • In the meantime cut and add the potatoes
  • Cut and add the carrots
  • If in any previous step you have no more oil in the pot, or add a bit of oil more, or water or white wine
  • Clean and add the artichokes
  • Add boiling water till you cover all your vegetables and cook for at least 30 minutes
  • Try with a fork the potatoes to check if they are done.
  • Serve with extra olive oil on top and pepper
  • You could also boil some rice and put it inside the soup. I always boil it extra, cause if i have remaining soup with the rice inside it puffs and I do not like it a lot
