
Ingredients
- 1 onion
- 2 carrots
- 1 potato
- 2 artichokes
Steps
- Place a pot in medium fire with a bit of olive oil
- Cut the onion
- Cook the onion till transparent
- In the meantime cut and add the potatoes
- Cut and add the carrots
- If in any previous step you have no more oil in the pot, or add a bit of oil more, or water or white wine
- Clean and add the artichokes
- Add boiling water till you cover all your vegetables and cook for at least 30 minutes
- Try with a fork the potatoes to check if they are done.
- Serve with extra olive oil on top and pepper
- You could also boil some rice and put it inside the soup. I always boil it extra, cause if i have remaining soup with the rice inside it puffs and I do not like it a lot
