
Ingredients (for 4 small portions – to be served accompanied with sth more like fruits or a cream OR 2 big portions)
- 1 Egg separated in yolk and egg white
- some drops of white vinegar or lemon
- 25 gr powdered sugar
- 2gr vanilla sugar or zest of 1/5 orange
- 15 gr. rice flour
- 4 gr. corn starch
- Pinch of salt
- 8ml milk
- 5 ml vegetable oil
Steps
- Preheat the oven in 160 degrees
- Whisk the egg white with the vinegar and before it ends up in stiff peaks add all the sugar and the vanilla sugar
- Add the yolk and mix well
- Add the rice flour and the cornstarch together with the salt. Ideally you want to pass the flours through a strainer, so the your mix doesn´t become lumpy
- In the end add the milk and the oil
- Butter a cake form of 14 or 15cm. I used here a 15cm baking pan.
- Bake for around 30 minutes till it gets nice golden brown on top (start checking a bit before cause this timing is for my oven!)


This cake for those ingredients is very thin but fluffy! You can double the ingredients or make them in a smaller baking pan.
