Greek Pita – Pie – Hortopita – Pie with greens

In Naxos you can find different greens if you know how to distinguish them. The most common one in Apollon, that you can find it very easily is fennel.

Since this pie we made it in Germany, we used the salad greens we have in our balcony but the important recipe is of the pie dough. Inside you can put whatever you have home. From minced meat to aubergines or potatoes.

The dough was 25x35cm. Then you can choose if you want it closed or open and the size of the baking tray you will use.

Ingredients

  • 8 tablespoons flour
  • 2 tablespoons olive oil
  • 5 tablespoons warm water
  • pinch of salt
  • a bit more olive oil

You mix altogether the ingredients and then you leave the dough aside to prepare your filling.

Chortopita feeling Ingredients

  • 1 onion
  • 1 green part of a leek
  • 2 spring onions
  • whatever green you want to use
  • salt
  • pepper
  • a bit of bread crumbs
  • Extra flavour: Feta! – When I put feta, I do not put salt
  • Optional: white wine

Chop everything in cubes. I cut the greens in a bit bigger pieces.

Add the chopped onion in a pan with a bit of olive oil and when it is transparent, add the chopped leek and the spring onions.

Wait till everything is cooked and then add a bit of white wine. This is not a must. You can add water but the wine gives an extra flavor.

In the end add the greens and after 5 minutes turn off the fire and let them cool down a bit. They shouldn’t have liquids.

I let my greens a bit more cause I used kale from my garden in the greens and needs a bit more cooking.

When the greens cool down, I add the bread crumbs (in to absorb any liquids left) and feta.

Bake in 180 C in a preheated oven for 20 minutes and then 7 minutes in grill. I made my pie very thin, so it might be that you need a bit more in the oven. Since this pie has no egg inside and your ingredients are already cooked, actually you only need to check the upper part of the dough that it gets direction golden brown and crispy (you can check with a fork).

Tips: You can add also mint or a peppermint to give extra flavor. Whatever you have home. Or thyme or oregano or basil.

Below you can see the green salads we used in their “house”. We can take them directly from our balcony.
