
Naxos is full of fennel. You will see it at the side of the road, on the mountains, close to the beach, everywhere! Why not baking something easy with it?
Fennel is a plant that you will find in a lot of plants of the Aegean and its scientific name is Foeniculum vulgare. Below you can find a post we did about the plant.
Ingredients
- 1 teaspoon dried yeast
- 1/3 teaspoon sugar
- 60gr water ???
- 80gr flour
- 25gr frozen fennel
- 20gr grinded graviera (or whatever salty cheese like pecorino or grana)
- pinch of salt
Steps
- Mix the yeast with the sugar and the water
- Add the rest of the ingredients and let the dough rest for half an hour
- Shape 6 rounded flat cookies of 1cm maximum thickness
- Bake in preheated oven of 200 degrees Celsius for 20 minutes
- Turn them and bake them for 2 minutes more
They match super well with Tzatziki!
