
Ingredients
- all the green part of a leek
- 2cm of the white part of a leek
- 1 medium onion in small cubes
- 150gr of chicken in small pieces
- 200gr mushrooms
- 1 shot of beer or white wine
- 2 eggs
- salad greens like kale or collard greens (2 handfulls) – optional
- the dough of your choise, that could be store bought, we used a lard crust pie but you could use a Tart dough like this here: Sourdough tart dough or olive oil pie crust
Steps
- cook the onion and the white part of the leek in olive oil and low heat till they are transparent
- add the chicken till it is cooked
- add the green part of the leek and the salad greens and cook it till it looses a bit of mass
- add the mushrooms and when there is no more liquid in the frying pan, add the alcohol you chose
- give it a bit of time till the mix is not warm any more and then add the eggs (you do not want them to be cooked)
- Add the dough of your preference in an oven tray with a baking paper
- Add the filling and bake accordingly
