chicken, mushroom and leek pie filling

Ingredients

  • all the green part of a leek
  • 2cm of the white part of a leek
  • 1 medium onion in small cubes
  • 150gr of chicken in small pieces
  • 200gr mushrooms
  • 1 shot of beer or white wine
  • 2 eggs
  • salad greens like kale or collard greens (2 handfulls) – optional
  • the dough of your choise, that could be store bought, we used a lard crust pie but you could use a Tart dough like this here: Sourdough tart dough or olive oil pie crust

Steps

  • cook the onion and the white part of the leek in olive oil and low heat till they are transparent
  • add the chicken till it is cooked
  • add the green part of the leek and the salad greens and cook it till it looses a bit of mass
  • add the mushrooms and when there is no more liquid in the frying pan, add the alcohol you chose
  • give it a bit of time till the mix is not warm any more and then add the eggs (you do not want them to be cooked)
  • Add the dough of your preference in an oven tray with a baking paper
  • Add the filling and bake accordingly
