the quickest 2-ingredient pancakes – lactose free also tested

ingredients

  • 130gr yoghurt (tried also with Soy lactose free yoghurt and worked pretty well)
  • 170gr flour with baking powder already incorporated
  • 1 teaspoon salt (optional)

steps

  • Mix the ingredients till you have a non sticky dough
  • when you will start dividing it in order to make each individual pancake, it will be sticky again but you can use a bit of flour flour in order to shape it
  • use your hands and fingers to roll it and make them max. 1cm thick
  • preheat your frying pan on a high temperature (we do it at 5 out of 6) and do not use oil. We just make them on the heated pan
  • each side needs less than a minute. You will see the pancake raising a bit.
    When the first side start being brown, turn it and bake it in the other side as well

enjoy them for breakfast or a quick dessert!

You can make also a quick marmalade to accompany them!
