quick pasta with leftover fish

Ingredients

  • pasta (penne or tortiglioni match very well with this dish)
  • 1 medium onion
  • 3cm of leek (the white part)
  • 2 tablespoons of fresh green pepper cut in small pieces
  • leftover fish (remove all the bones – whatever white flesh fish would do)
  • 1 spoon of fresh ginger
  • 4 shots of prosecco or white wine
  • olive oil
  • salt
  • freshly grounded pepper
  • fresh coriander for serving (parsley would match as well and if you do not have either, use some dried herb like thyme or oregano or basil)

Steps

  • Add olive oil in a frying pan and when it is warmed up add the onion, the leek and the pepper and cook in medium temperature
  • Add salt
  • When the pan is dry, add the prosecco or wine and let it cook
  • When the sauce is ready, remove from the fire
  • Prepare the pasta and in the last 3 minutes add also the broccoli
  • Add the pasta in the sauce and serve warm
