
Ingredients
- 200gr cabbage (if it is a bit more or less it is absolutely fine)
- 1 onion
- 1 lemon
- 3 espresso cups rice
- olive oil
Steps
- Cut the onion in dices
- Warm some olive oil in a pot and add the onions
- Cook the onion until transparent in medium fire
- While the onion is being cooked, cut the cabbage in stripes (2-5mm approximately) and wash it well
- Let the cabbage drain a bit
- When the onion is ready, add the cabbage
- Mix the cabbage with the onion and cook it for a couple of minutes with the cover on top – till it becomes a bit soft
- Add the rice you wish – I calculate 1 espresso rice per person. With this quantity of cabbage I would put from 2 to 4 espresso cups
- As a general rule for each espresso cup I add 2 espresso cups of water, so double the quantity but you should follow the quantities that your rice package says
- Add the salt and lemon according to your taste when the rice is cooked and serve with good quality olive oil, fresh pepper on top and some slice of lemon in case someone wants extra lemon in her/his dish
