Sourdough chocolate-banana-coconut cake – 1 bowl recipe

Without baking powder or baking soda! Prepare it in the night and bake it in the morning! You will have an awesome smell in your kitchen in the early morning!

Ingredients

  • 100ml milk
  • 1 tablespoon vinegar
  • 150 gr sourdough
  • 1 very ripe and soft banana mashed
  • 2 tablespoons coconut oil
  • 40gr marmalade (apple or pear matches very well)
  • 100gr sugar
  • 4gr vanilla sugar
  • pinch of salt
  • 40gr shredded coconut
  • 50 gr flour
  • 40 gr chocolate chopped in small pieces (I used 99% cocoa – better use a chocolate with high percentage of cocoa, if not, reduce the sugar in the recipe)
  • 2 tablespoons marmalade for decorating
  • 3-4 tablespoons of shredded coconut for decorating

Steps

  • Mix the milk and the vinegar
  • Add the sourdough and mix
  • Add the mashed banana, the coconut oil and the marmalade and mix well
  • Add the sugars and the salt and mix
  • Add the coconut and the flour and mix
  • Add the chopped chocolate
  • Flour and butter your baking pan and add the dough
  • Let it rest in room temperature overnight (if it is too hot, better put it in the fridge or if it is too cold, let it rest longer)
  • Next day it should have risen
  • Preheat the oven in 180 degrees Celcious
  • Bake in preheated oven till the surface is golden and a toothpick comes out clean (45-60 minutes depending on the oven)
