Quick pasta with aubergine

Ingredients

  • 1 onion
  • 1 clove garlic
  • 1 aubergine
  • 3-4 mushrooms (optional)
  • 350gr tomato sauce
  • salt
  • pepper
  • olive oil
  • feta cheese to serve (optional)

Steps

  • Heat the olive oil in a pan and add the chopped onion and garlic
  • When the onion is transparent, I remove the garlic
  • Add the mushrooms and the aubergine and let it cook properly
  • Add the tomato sauce and reduce the heat
  • Let it boil gently and turn off the heat after 10-15 minutes of boiling, depending on how thick you would like to have your sauce
