Pastiera di tagliolini or pastiera di pasta dolce – Italian easter pasta cake

Ingredients

  • 250 g pasta capellini (I used a different kind cause I didn´t find capellini! But the original recipe has capellini!)
  • 250 g sugar
  • pinch of salt
  • 15gr butter or lard
  • 4 eggs
  • 500ml milk
  • 4ml of orange blossom
  • 1 lemon zest grated
  • 1/2 tablespoon cinammon
  • a bit of lard or butter to cover the baking pan
  • a couple of tablespoons of sugar to cover the baking pan
  • 40gr optional candied orange or citron
  • optional powdered sugar to serve

Steps

  • Preheat the oven in 200 degrees Celcius
  • Cook the pasta normally and drain them
  • While they are warm add the sugar and lard and mix
  • Let them cool down
  • Add all the ingredients except for the milk in the pasta and let them rest for a couple of hours
  • Add the mix in the baking pan (22-26cm) and bake in 180 degrees Celsius (so lower the oven 20 degrees) till the cake is golden (approximately 50 minutes)
  • Serve it cold topped with powdered sugar
  • It is better if you prepare it 1 day in advance

You could also use pasta from the previous day, if you do not cook them very salty.
