Greek zucchini fritters – Kolokeethokhefthedhes

Difficult to pronounce but delicious to eat! Typical mezes to eat in a tavern in Greece!

Ingredients

  • 220gr shredded zucchini
  • 1 tablespoon olive oil
  • 2 tablespoons beer or sparkling water
  • 1 medium egg
  • 110gr feta
  • 110gr flour
  • salt
  • pepper
  • fresh peppermint or dried peppermint or dried thyme (optional)
  • vegetable oil to fry them

Steps

  • Add the shredded zucchini in a bowl and add all the liquids (olive oil, beer and egg)
  • Mix well and add the feta in small pieces
  • Add the flour, the salt and the pepper
  • In the end add the fresh peppermint or whatever herb you wish to use
  • Put enough vegetable in a frying pan and let it be very hot before you add a tablespoon for each zucchini fritter
  • You will need to turn them but on the other side they will need less time, so take care not to burn them
  • Place them in kitchen paper to absorb a bit of oil
  • Eat them while warm
