Sourdough cocoa cookies

Ingredients

  • 105gr sourdough starter
  • 30gr butter
  • 20gr sugar
  • 30ml milk
  • 60gr cocoa
  • 60gr all purpose flour
  • 40gr raisins
  • sesame

Steps

  • Warm the milk with the sugar and add it to the sourdough. Check the temperature. It should be warm but not too much, cause you will kill our sourdough
  • Mix well
  • Add the milk in the same pot where the butter was, add the salt and let it warm a tin bit or if it is in room temperature that´s fine
  • Add the milk in the sourdough
  • Add the cocoa and the flour in the dough
  • Let the dough rest in a cold room or in the fridge overnight

NEXT DAY

  • Put the raisins for at least half an hour in water (the water should be covering them)
  • Mix the raisins with the dough
  • Add a full teaspoon for each cookie in a parching paper and let it rest
  • Bake in 200 degrees Celsius until they are hard on top. Approximately for 15 minutes in my oven.
