
without baking powder or baking soda
Ingredients
- 75 gr sourdough
- 100ml water
- 75gr wheat flour
- 25 gr oat flour
- 1 egg (divided in yolk and egg white)
- zest of 1/2 orange
- 35gr sugar
- 4gr vanilla sugar
- 45 gr orange pulp (I made a juice and I used the pulp that remained in the juicer)
- 5 tablespoons of raisins
- 30gr sour cream
- pinch of salt
Steps
- Mix the sourdough with the water and the flours and let it get fluffier at least for a couple of hours in a room temperature higher than 20 degrees
- Put the raisins in water to soak
- After the two hours passed: whisk the egg white with 20gr of sugar and the pinch of salt till stiff peaks (you do not need to clean your had mixer before moving to the yolk! But do not do the opposite)
- Mix the yolk, 15gr of sugar, the vanilla sugar and the orange zest till it get whitish
- Add in this mixture the sour cream
- Add in your sourdough the yolk mix and stir well
- Add in 3 times the egg white
- Butter your baking form and then flour it
- Bake in 200 degrees Celsius preheated oven till the surface is golden
