Apple cinnamon sourdough cake

Ingredients

  • 1/4 cup (65 g) sourdough starter (discard)
  • 1/2 cup (120 g) lukewarm water
  • 1 cup (125 g) all-purpose flour
  • 2 tablespoons margarine
  • 60 g sugar
  • 1 egg
  • 4 g vanilla sugar
  • 2 tablespoons yogurt
  • 1 teaspoon cinnamon – for the apple
  • 1 tablespoon sugar – for the apple
  • juice of 1/2 a lemon – for the apple
  • 1 apple
  • 1 tablespoon sugar – for the middle of the cake – optional
  • 1 teaspoon cinnamon for the middle of the cake – optional

Steps

  • Mix the sourdough with the warm water and the flour and let it rest at least 6 hours
  • After 6 hours preheat the oven at 175 Celsius grades
  • Cut in thin slices the apple and cover it with the lemon juice, the sugar and the cinnamon (quantities where is written: “for the apple”)
  • Soften the margarine with a spatula and add the sugar
  • Add the yogurt and mix well
  • Add the egg and the vanilla sugar and mix well
  • Incorporate the margarine mix in the sourdough mix
  • Butter a baking pan and add half of the mix
  • Sprinkle a tablespoon of sugar and 1 teaspoon of cinnamon (and some of slices of apples if you want)
  • Add the rest of the dough
  • Add the apples on top of the cake
  • Bake for 50 minutes

This cake resembles a semolina cake. It is quite sense, but I like to cut it in small pieces (that you can eat with 1 bite) and serve it in the middle of the table with a but of powdered sugar on top!
