Quick carrot cake – GF + DF version

For the GF version you need a tiny bit less (GF) flour and add a bit of water. The rest remains the same


  • half a cup vegetable oil
  • 60gr sugar
  • 1 egg
  • 130 gr flour (for the GF version use 120gr GF flour + 10ml of water)
  • 4gr vanilla sugar
  • 4gr baking powder
  • 2 shredded carrots
  • 3 teaspoons of small pieces of salted peanuts
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

For the cream layer (non dairy free)

  • 2 tablespoons cream cheese
  • 1 tablespoon margarine
  • 1 tablespoon sugar
  • 4 tablespoons greek yogurt

Dairy free version: use DF whipping cream!

Decoration: shredded carrot with small pieces of salted peanuts and thin sliced dried bergamot orange (that gives a beautiful green color that contrasts the orange of the carrot)


  • Preheat the oven in 200 degrees Celsius
  • Mix the oil, sugar and the egg till you have a smooth dough
  • Add the flour, the vanilla sugar, the baking powder and the spices
  • In the end add the carrot and the salted peanuts
  • Butter and flour your baking pan
  • Bake for 25 minutes
  • To prepare the cream just mix well all the ingredients together
  • Add the cream on top of the cake and decorate with extra carrot, bergamot orange and more salted peanuts
