
Ingredients
- 100gr sourdough starter (discard)
- 130gr lukewarm water
- 180 g all-purpose flour
- 2 tablespoons sugar
- 2 tablespoons green apple liqueur (or whatever liqueur or rum)
1st alternative
- 3 dried dates (cut in small pieces/cubes)
- 3 dried plums (cut in small pieces/cubes)
- 3 teaspoons raisins
- 2 teaspoons almonds (cut in small pieces)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon all spice
2nd alternative
- 3 dried dates (cut in small pieces/cubes)
- 3 dried plums (cut in small pieces/cubes)
- 3 teaspoons raisins
- 3 teaspoons salted peanuts (cut in small pieces)
- 1/2 teaspoon coriander
- 1/2 teaspoon ginger
- 1/2 teaspoon all spice
Steps
- Mix the sourdough, the water and the flour and let it rest for 1,5 hours
- Knead it for 30 seconds and let it rest for another hour
- Place the liqueur together with all the dried fruits and the spices together
- Add the sugar and the dried fruits (they should have absorbed all the liqueur) and after kneading it for 30 seconds place it on a baking paper that is in a bowl resembling the baking pan you are going to bake it.
- You can let it for an hour or you can put it in the fridge over night and bake it the next day
- Preheat the oven in maximum and have inside our dutch oven or whatever baking pan with a cover
- Place your dough together with the baking paper in the the dutch oven and bake for 20 minutes in maximum temperature
- After the 20 minutes lower the temperature in 200 degrees C and remove the cover
- Let the dough cool down before you cut it!
