Lemon pudding (DF) (GF)


  • 1/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups almond milk
  • juice of 1 medium lemon
  • zest of one lemon


  • Add in a pot the sugar, cornstarch and salt, turn on the fire in medium and add 1 cup of almond milk and the zest
  • You need to stir the whole time, so that it doesn´t get stuck
  • when it starts getting thicker, you add the second cup of almond milk and stir till the texture is the one of a pudding
  • Add the lemon juice and stir again till it gets absorbed
  • When it is ready you add it in bowls. It is enough for 5 small cups, like the ones of panacota
