Easy Recipe: Kritharaki and Boiled Veggies

When you have left over boiled vegetables, you can make a super quick and simple dish with greek kritharaki. Awesome! The orzo or kritharaki in greek is a nice alternative to past and rice and here you only need to add the vegetables that you already have.

Ingredients

  • 2 espresso cups kritharaki (for 2 people)
  • whatever left over boiled vegetables you have. We had zucchini, potato, carrot and red beets
  • 3 tablespoons of cream cheese
  • dried herbs like thyme (that we used here) or oregano

Steps

  • Add the kritharaki in boiling water (for 2 espresso cups kritharaki you need 4 cups of boiling water)
  • When the water is gone, it is ready and you can add the cream cheese
  • When the cream cheese is well incorporated, add the cooked vegetables in small pieces and stir gently in order not to smash them
  • Add the fresh herb(s) of your choice and enjoy
