
Do you have left over boiled red beet? Awesome! If your time is limited and you do not want to make the classic pasta or rice, the orzo or kritharaki in greek is a nice alternative and here you only need to add already cooked red beet. Maybe it could work with fresh as well and give a bit of color but we haven´t tried this yet.
Ingredients
- 1 clove garlic
- half a small onion
- 2 red beets, that are already boiled and cut in small pieces
- 1/2 espresso cup red wine
- 2 espresso cups kritharaki (for 2 people)
- butter or extra vergin olive oil
- dried herbs like thyme (that we used here) or oregano
Steps
- Cook in a frying pan the onion and the garlic and add the red beet
- Cook them altogether for a while and when you have no more liquids, add the wine
- Add the kritharaki and give it a good stir and add 4 espresso cups of boiling water
- When the water is gone, it is ready
- Add olive oil or butter and serve
- Add the fresh herb(s) of your choice and enjoy
