The importance of the temperature in pour over

You will have to adjust the temperature to the kind of beans you have. But in general if you use hot water, this will make a bitter or with a burnt flavor cup. If you use cool water, this will make a weak and tasteless cup.

For light-roasted coffee go for higher temperatures, that will give you a less sour and more acidic cup.

For medium-roasted coffee for average temperatures, in order to keep a balanced cup.

For dark-roasted coffee go to the lower range of temperatures to avoid bitterness and extract sweetness in your cup.

A rule of thump if you do not have a temperature is to let the water boil and then wait 30 seconds before you start your brewing.
