black eyed beans salad with mulberries and fresh greek cheese

ingredients

  • Red wine vinegar (enough to cover the mulberries)
  • 1 tablespoon salt
  • 1 cup of mulberries
  • 1,5 – 2 cups of black eyed beans (cooked with just a bay leave)
  • 10-15 small balls of sweet myzithra (fresh Greek cheese)
  • optional: salt and black pepper to serve

steps

  • Leave the mulberries in a bowl with the vinegar and the salt for at least half an hour
  • Add in a bowl the beans
  • strain the mulberries and add them on the beans
  • make small balls with the myzithra and add them on top!

enjoy! This is an easy recipe that you can use your mulberries in a salad, cause mulberries can be used also in savoury recipes.
