mulberry cheesecake

When the time comes, we get looooots of mulberries. We make quite a lot of liquor and we love eating them fresh, but we always have more mulberries waiting to be used! Here is one of our favorite and very easy recipes.

this recipe is for 4 people.

ingredients

  • 250gr mulberries
  • 5-10gr sugar
  • 10ml fresh lemon juice
  • 150gr Greek yogurt
  • 80gr sweet myzithra (fresh Greek cheese)
  • 12 biscuits Papadopoulou (butter biscuits)
  • 1 shot of liquor mulberry (Stella makes an amazing one) – you can use another liquor if you don’t have mulberry
  • 1shot of water

steps

  • Add the mulberries (after washing them) with the sugar and the lemon juice in a pot and let them boil till they do not have any juice. They will get smaller and darker. Be careful, that you don’t burn them
  • crumble the biscuits with your hands in a plate and add the liquor and the water. Mix and let them stay there and absorb the liquids.
  • mix the yogurt and the fresh Greek cheese.
  • when the mulberries are done, you can start the assembly. You could do it in a ball or a glass. First go the biscuit, then the yogurt/cheese, then the mulberries and in the end the lemon chest.
