sourdough Panettone with chocolate, almonds (caramelised and in slices) and walnuts

Ingredients

-60gr sourdough

50gr egg yolk (2,5 large eggs)

50gr sugar

80gr butter

125gr water
265gr flour

1/2 small spoon of vanilla

20gr honey

40gr sugar

40gr egg yolk (2 large eggs)

60gr flour

10gr butter

20gr sliced almonds

20gr caramelised almonds

130gr chocolate chips

40gr crushed walnuts

1 small spoon of butter

Normally it takes me 2,5 days to make a panettone but it is not that hard! You only need to plan a bit. The first day you prepare and strengthen your sourdough, second day you work with the dough and beginning of 3rd day you bake it and have it for lunch time ready! Here are the instructions step by step!


Steps

  • The first day feed your sourdough three times with super strong flour. The last time should be before you go to sleep and your sourdough shoule be quite stiff with not a lot of water.
  • The next day during the morning prepare the dough here we start: First you mix everything together of the dough (the first part of the ingredients). I knead it for around 10 minutes. The 10 minutes count from the moment you have a homogeneous mix. Let the dough rest.
  • It needs to double. (At home we have 20-22 grades so it takes till afternoon/evening for the dough to rise. This will depend though to the conditions you have home!)
  • When your dough raises, add the rest of the ingredients 1 and mix again well till you have a homogeneous mix. This is a difficult part and it helps if you try to mix with a spoon all the “rest of the ingredients 1” all together without the butter and then add them in your basic dough. When you cannot mix further with the spoon, start adding the butter (do it 3 times with the 10gr, so 3-4 gr every time) at your hands and let it melt between your hands and then knead the dough till is homogeneous. Let it rest and double again.
  • Add the rest of the ingredients 2 and knead for 10 minutes
  • Place your dough in the special rounded papers for panettone and it will have to triple. I turn up the oven in 35 degrees in the night and when the oven reaches them, I turn it off and I let it there all the night
  • In the morning of the next day I preheat the oven in 160 degrees
  • Make a cross on the panettone and add a spoon of butter
  • Place the panettone in the oven and bake it for approximately 40-50 minutes till it is nice and golden on top
  • When the panettone is baked, you need to place 2 sticks (you can use the ones for grilling meat!) in it and place it upside down till it cools down
  • You can serve it like it is or with some powdered sugar
