eggless whole wheat spring carrot cake

Ingredients

  • 70gr greek yogurt
  • 1 teaspoon apple cider vinegar
  • 10ml water
  • 75gr whole wheat flour
  • 35gr sugar
  • 1/3 teaspoon baking soda
  • 1/4teaspoon baking powder
  • pinch of salt
  • 1/2 teaspoon cinnamon
  • 20gr melted vegan butter
  • 4gr vanilla sugar
  • 20gr shredded hazelnuts
  • 20gr raisins
  • 25gr chocolate in small pieces
  • 60gr shredded carrots
  • chocolate for decoration

Steps

  • Preheat the oven at 175 degrees Celsius
  • Mix all the dry ingredients (except the carrot, raisins and chocolate) and make a hole in the middle
  • Add in the hole all the wet ingredients and mix
  • Add the carrots, chocolate and the raisins and mix
  • Butter and flour your baking pan
  • Add the mix
  • Bake till a toothpick comes out clean (depending on the oven should take around 40-50 minutes)

You can decorate it with chocolate!
