traditional Greek recipe: fava – yellow splitted peas spread/dip

ingredients

  • 1 onion
  • 1 carrot
  • 1 espresso cup yellow splitted peas (and 5 times water, so 5 espresso cups water)
  • 1/4 of a chicken broth cube
  • 1 leaf bay
  • salt
  • freshly grounded pepper
  • good quality olive oil
  • Bukovo (optional)

steps

  • Add at a frying pan olive oil and add the onion
  • cut the carrot in small pieces and add it in the onion
  • add the bay leaf
  • cook till the onion is transparent
  • add the fava, stir and add the water with the broth cube as well
  • let everything cook till fava is soft and remove the bay leaf
  • Purée everything together with one spoon lemon and add salt according to your taste. You could further add one more spoon of lemon
  • serve with olive oil, freshly grounded pepper and optionally bukovo
