mindblowing green soup with cod

This soup has a fantastic green matte color and the fish, the seeds and the bukovo make a nice contrast.

Ingredients

  • 5-6 medium potatoes (using potatoes of Naxos will make this dish even better!)
  • 2 handfulls of spinach
  • 2 tablespoons of greek yogurt
  • 1 piece of cod
  • salt
  • pepper
  • optionally to serve: bukovo, sunflower seeds and pumpkin seeds

Steps

  • Boil the potatoes and when they need 2 minutes add the spinach
  • Make a purree with the potatoes, the spinach, the yogurt and season with salt and pepper as you wish
  • Steam the cod and add it on top of the soup in small pieces
  • You can serve it with different seeds and a bit of bukovo
