Ideas – Rice with sausages and fried aubergine

This is not a quick dish or the easiest but it absolutely deserves it. Perfect for a Sunday lunch!

You need lots of pans and ideally you prepared your own broth. We used also this special spanish pepper called nyora (variety of Capsicum annuum).

You need to make a sofritto (before that we slightly fried the sausages in that oil, so that it gets the taste!) with what you have (we used onion, leek, garlic), add peppers and aubergine inside.

Add the rice and use the broth to cook it. We finish it in the oven!

Fry separately the aubergines and use them, when you serve the dish.
