vegan banana muffins

Ingredient

  • 1 medium ripe banana
  • 2 flax seed eggs
  • 3 tablespoons rice milk
  • 1 tablespoon coconut syrup
  • 1/2 cup almond meal
  • 1/3 oat flour
  • 4 gr vanilla sugar
  • 1 teaspoon baking powder

steps

  • Preheat the oven to 180 degrees Celsius
  • Prepare the flax seed in a bowl and let it for a couple of minutes aside
  • Mash the banana
  • add the banana in the bowl with the flax seed
  • add the wet ingredients and stir
  • add the dry ingredients and mix
  • add the dough in 7 muffin forms
  • bake till a bit golden on top, 30-40 minutes
