Stella´s mother used to make amazing pies! With homemade filo pastry. Once you have tried homemade filo pastry, you can never forget the difference! It is a bit laborious but still really doable. You should really try it.

Ingredients (for 8 small sheets or 4 bigger ones – the pie in the foto has 2 small sheets)
- 250gr flour
- 127ml water (if it is slightly warm is better)
- 1/2 teaspoon vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- extra flour for stretching the dough into sheets
- thin rolling pin (but it is possible also with the normal rolling pin – it will be more difficult though and might do not get so extra thin)
Steps
- Add in a bowl the flour and the salt and mix
- Make a small hole in the middle and add the water, oil and vinegar
- Mix well and let the dough rest at least half an hour
