filo dough – filo pastry – Phyllo

Stella´s mother used to make amazing pies! With homemade filo pastry. Once you have tried homemade filo pastry, you can never forget the difference! It is a bit laborious but still really doable. You should really try it.

This pie was a hortopeeta with feta!!! Delicious!

Ingredients (for 8 small sheets or 4 bigger ones – the pie in the foto has 2 small sheets)

  • 250gr flour
  • 127ml water (if it is slightly warm is better)
  • 1/2 teaspoon vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • extra flour for stretching the dough into sheets
  • thin rolling pin (but it is possible also with the normal rolling pin – it will be more difficult though and might do not get so extra thin)

Steps

  • Add in a bowl the flour and the salt and mix
  • Make a small hole in the middle and add the water, oil and vinegar
  • Mix well and let the dough rest at least half an hour
