Sourdough shortcakes or sponge-tarts

Ingredients

  • 100gr sourdough
  • 250gr flour
  • 100ml milk
  • 60gr coconut sugar – TRY WITH 40 HONEY AND TRY also stacking the dough! SO open in, cut it in 4 pieces, place one over the other, open it again, cut it in 4 and place one over the other a second time
  • 100gr butter
  • 2gr salt

Steps

  • Mix in a bowl the sourdough and 50ml from the milk
  • In a pot add the butter and the sugar and warm them in low temperature till they melt.
  • Check with your finger, that the temperature is not too much before you add them to your sourdough
  • Add the sugar and the milk in small quantities (in 3-4 times) to the sourdough
  • Add the 50 ml milk in the pot that you had the butter and the sugar and stir, so that you “take” from the pot also remaining butter and sugar
  • Add the flour together with the salt in the sourdough
  • Let it rest overnight on the counter
  • The next day you shape the dough into a floured surface. Try to make it around 2 cm.
  • Cut the shape you want ( I did circles – you can use biscuit cutters)
  • Place it in the baking pan that you will bake them and let them rest till they double in size
  • Bake in a preheated oven in 200 degrees Celsius for 10 minutes and then around 10 minutes in grill until they get golden
  • Let them cool down, cut them in half and serve them with whipped cream and strawberries! Like in the foto above

But of course you can fill them with whatever you wish! Like whipped cream, cherry marmalade and chocolate (foto below) or with yogurt and nutella or …
