Buckwheat-potato-rice GF bread

This bread has a very strong taste of buckwheat

Ingredients

  • 4gr powdered linseed
  • 1 tablespoon water
  • 80gr whole buckwheat flour
  • 35gr rice flour
  • 35gr potato flour
  • 1g xantham gum
  • 1g baking soda
  • 93 ml water
  • 1 teaspoon vinegar
  • sesame seeds – optional

Steps

  • Mix in a small bowl the linseed and the tablespoon water and let them a couple of minutes till they get like a gelatine
  • Mix all the dry ingredients
  • Make a hole in the middle of the dry ingredients and add the linseed, the water and the vinegar and mix well
  • You can spread sesame seeds on top of the bread, which match nicely with the buckwheat flour
  • Bake in preheated oven in 200 degrees Celsius for 15 minutes with aluminum on top and 15 minutes more without the aluminum. If you make a bigger quantity (because this one is a very small bread), you should let them in the oven longer
