Lagana – greek pre-Easter bread

Lagana made in Apollon from Stella!

Super easy recipe from Stella, that you do not want to miss! Enjoy it with savory or sweet flavors but just the lagana by itself is also just delicious!!!

In Greece it is traditional to eat this bread on Clean Monday!

Ingredients

  • 600gr bread flour
  • 300ml water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 9gr dry yeast
  • sesame

Steps

  • Add in a small glass the dry yeast, the sugar and 50ml of your water
  • Dissolve the yeast and let it there for 5-10 minutes
  • Add your yeast in a bowl, the rest of 250ml of water, the salt and mix
  • Sieve the four also in the bowl and mix
  • Knead the flour for at least 10 minutes
  • Cover it with membrane and let it rest for around 2 hours until it becomes double in size
  • Divide it in two pieces and make two flat breads
  • Add the sesame on the bread
  • Let it rise again for around half an hour
  • Add baking paper on the oven tray
  • Preheat the oven in 200 grade Celsius
  • Bake in “fan” mode for half hour
