
Ingredients
- Dough of pizza (bought or your preferred recipe or you can try ours below)
- olive oil
- 1 onion
- 2 spring onions or a bit of leek
- greens (kale, dino kale, collard greens and chards) – I use 6-8 leaves but the ones of my garden are huge, so taking into onsideration that they will leave a lot of volume, use for this recipe the amount of leaves that you want to have on your pizza – I never want mine super heavy
- basil (3-4 leaves)
- 100-120gr quark (keep a bit to put on the baked pizza)
- fresh chili pepper (we used Bishop´s crown) to add after the pizza is baked
- other optional: spinach would also match or fresh basil leaves
Steps
- When you have the pizza dough prepared and on the baking pan add a bit of olive oil on the surface and spread it with a brush
- Add olive oil in a pan and when it is warm, add the onion cut in cubes, the spring onion or the leek
- Add the greens also in thin slices and cook them thouroughly – you will might have to add a bit of water or white wine (depending on how wet were the greens or the quantity of oil you used in the beginning
- When they are cooked, stop the fire, add the basil leaves and puree this mix – it doesn´t have to be 100% puree, you can leave some small parts
- Add the quark and mix well
- Spread the mix on the pizza and bake as usually
- When the pizza is ready add a bit of quark cause it gives a fresh note to the pizza and stick the thin sliced chili pepper on the quark!
