
A lovely autumn and winter dish
Ingredients
- 1 onion
- 2 carrots
- 2 medium potatoes
- 4 handfull peas
- olive oil
- fresh fennel leaves or dill
Steps
- Cut the onions in stripes and add them in a heated pot with olive oil
- Peel the carrots and cut them in bite-size pieces
- Add the carrots in the onions when the onions are transparent
- Peel the potatoes, cut them in bite-size pieces and add them in the pot. Try to cut the pieces not till the end but leave like a cm and them pull the potato. Like this you will have a thicker sauce without adding any flour
- Add some water in the pan till you cover everything and 1 finger more
- Cook them for around 20 minutes and before they are completely cooked, add the peas and cook from 5 to 10 minutes more according to your taste and how hard you prefer (taste it and decide if you wish to cook it more)
You can eat it like this with a bit of bread or accompany it with a bit of feta cheese!
