
Ingredients
- 1kg tomatoes (the best would be if they are very ripe and juicy)
- 2 red beets already cooked
- 1 small onion
- 1 garlic
- 1 green pepper
- 1/2 red pepper
- 1/2 cucumber
- 1 piece of dry bread
- 200gr olive oil
- 3 tablespoons vinegar (de Jerez would be the best!)
- salt
- Optional: small pieces of egg, feta, seeds (like pumpkin seeds or sunflower seeds) or one of the ingredients that the gazpacho already has like pepper
Steps
- You add all the ingredients in a tall bowl and use a mixer to make them puree
- Add the olive oil and the vinegar and mix well
- If it is too thick, add cold water – you want the texture to be like a soup. If it is too thick it is in the side of salmorejo actually, that the recipe is about to come!
- Serve it with whatever toppings you wish and add a bit of virgin olive oil
