Brisee Dough for pies

Here we baked a pie with leeks and creme fraiche

Very buttery and with a beautiful aroma!

Ingredients

  • 180gr flour
  • 40gr butter
  • 1 teaspoon salt
  • 1 pinch of sugar
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 4 – 5 tablespoons water (add it slowly and mix it in the meantime)

Steps

  • Mix the flour, salt and sugar
  • Add the butter and mix it well
  • Add all the olive oil and the vinegar and only 3 tablespoons of water
  • Mix well and keep adding water 1 tablespoon at a time to get a consistency of the dough that is not sticky
  • If you add too much water, you can correct it with a bit of flour
  • Place in your baking pan a baking paper
  • Make some holes with a fork in the dough
  • I usually bake the dough for 5 to 10 minutes alone and then I add the filling and bake it till it becomes golden, which is for my oven about 30 minutes in 180 degrees Celsius. If you wish to bake it in lower degrees like 150 degrees Celsius this will last at least 10 minutes more
