GF pie crust – press in and no roll method

We used for the filling greens from the balcony, onion, eggs and a tiny bit of rice to avoid that the dough will be soggy

Ingredients

  • 130 oat flour
  • 30gr rice flour
  • 11 gr corn flour
  • 3gr sea salt
  • 2 tablespoons olive oil
  • 8-9 Tbsp cold water as needed

Steps

  • Mix all the dry ingredients
  • Add the olive oil and 8 tablespoons of water
  • Add more water if needed – the dough should stay together but it should not be sticky and this is why you need to add the water carefully
  • Let the dough rest for an hour
  • Press in your baking pan the dough. This might take some time but do not give up. You might need to make “patches” and it is easy. You will not even see the difference after it will be baked
  • Bake in a preheated oven of 180 degrees for 5 minutes and then add your dough and bake according to your filling. For greens filling I baked it approximately half an hour

The dough is really crunchy!
