Sourdough focaccia

Ingredients

  • 120gr sourdough starter
  • 140gr water
  • 170gr all purpose flour (our dough should be sticky – so you might have to put less or a bit more depending on your starter)
  • 65gr spelt flour
  • 1 tablespoon of salt
  • olive oil to over the dough
  • more salt to sprinkle on the dough before baking (optional)

Steps

  • Add all the ingredients together
  • the dough is quite sticky and wet
  • the first 1 hour fold your dough a couple of times
  • Let the dough rest in the fridge or even on our counter for 8 hours if our kitchen is old enough
  • In the morning add a bit of olive oil in our baking pan (I am using a reusable sheet with I would definitely recommend)
  • Add the dough and spread it out – I did it with a spoon that I was adding water all the time in order to be able to spread this sticky dough
  • then water your fingers and make small fingerprints on the dough like the focaccia has – See the foto
  • Add a bit of olive oil on top
  • Sprinkle a bit of salt
  • Let it rest on he counter for a couple of hours or put the dough in preheated oven in 40 degrees Celsius for 30 minutes
  • Preheat the oven in 200 degrees and bake for 17 minutes and then 1 minute in grill
