
Ingredients
- 120gr sourdough starter
- 140gr water
- 170gr all purpose flour (our dough should be sticky – so you might have to put less or a bit more depending on your starter)
- 65gr spelt flour
- 1 tablespoon of salt
- olive oil to over the dough
- more salt to sprinkle on the dough before baking (optional)
Steps
- Add all the ingredients together
- the dough is quite sticky and wet
- the first 1 hour fold your dough a couple of times
- Let the dough rest in the fridge or even on our counter for 8 hours if our kitchen is old enough
- In the morning add a bit of olive oil in our baking pan (I am using a reusable sheet with I would definitely recommend)
- Add the dough and spread it out – I did it with a spoon that I was adding water all the time in order to be able to spread this sticky dough
- then water your fingers and make small fingerprints on the dough like the focaccia has – See the foto
- Add a bit of olive oil on top
- Sprinkle a bit of salt
- Let it rest on he counter for a couple of hours or put the dough in preheated oven in 40 degrees Celsius for 30 minutes
- Preheat the oven in 200 degrees and bake for 17 minutes and then 1 minute in grill
