
Ingredients (enough for 2 dishes)
- olive oil
- 1 onion in thin slices
- 1 carrot sliced (I like to do it with the vegetable peeler – see the fotos)
- 1 small zucchini sliced (I like to do it with the vegetable peeler – see the fotos)
- 1 tomato in slices
- 300 gr pork
- 2 table spoons maple syrup
- 1 table spoon maple syrup
- 1 table spoon oyster sauce
- 3 teaspoons thin sliced ginger
- 1 table spoon Worcester sauce
- juice from 1 lime
- salt
- pepper
- 100gr glass noodles
Preparation
- Cut the pork in big cubes or stripes and let it stay with all the ingredients (apart from the noodles) in a bowl
- Add in a big pan olive oil and when it is warm add the onions.
- When the onions are almost done add the carrot and in the end the zucchini
- When they are quite dry, you can add a bit of beer or wine or water and then the sliced tomato
- Let them in medium temperature for 5 minutes, then stop the fire and let them aside
- Heat a pan in high heat and add the pork until almost all the liquid is gone. You should have a bit of a sauce in the end
- While the pork in in the pan getting cooked, prepare in parallel the noodles according to the package. They normally need 3-5 minutes in boiling water.
- Add the glass noodles in the pan of the vegetables
- Add the pork in the pan of the vegetables and serve while warm.
