Fresh cheese from milk kefir

If you have milk kefir home, making fresh cheese is really easy. Whatever in needed you should already have it home.

  • What you will need is a high container and a towel of a coffee filter.
  • Secure it with a rubber band (you can see it in the left foto.
  • You must drain the kefir milk and the milk goes in the filter/towel while you can go on feeding with fresh milk your grains.
  • Cover the container and put it in the fridge to drain. The longer you leave it to drain, the drier will be your cheese and not so liquid.

You can use this fresh cheese as a base for dips. Accompany salmon with it instead of storebought cream cheese, use it in your salads or even in your pasta dishes.

The taste is mildly sour but very fresh and actually you are in charge to choose the milk you are using and you know there is nothing added to this fresh cheese.

I would recommend to eat it the same day and do not store it for longer as 3 days.
