This year we have lots of zucchinis. But really a lot. Not so many tomatoes though…

But let’s stick to the bright side, that our zucchinis are a lot, tasty and big! And make a pie!
Zucchini pie
Ingredients
- 2 medium onion (125gr approximately)
- 1 garlic
- 600 gr zucchini
- feta cheese (I put 100gr cause I didn’t have more, but I would say that 200gr would be really better-but you can put as much as you want! And if you want.)
- 4 table spoons oat flakes (you can substitute this with flour.)
- 10 table spoons flour
- 1/2 teaspoon baking powder
- 3 eggs
- 2 table spoons of yogurt
- oil and butter to fry the onion
- fresh herbs like dill or peppermint that match with zucchini (I used peppermint and the green part of the carrot that I had)
- salt and pepper as much as you want
- sesame if you want to put on top
Steps
- Start the oven in 280 C
- Cut in cubes and fry the onion together with the garlic with a bit of olive oil and butter
- Grate or cut in small pieces the zucchini and add it to the pan with the onion
- Let them in low temperatures for a maximum of 5 minutes and then remove the pan from the fire
- While it cools down whisk the eggs and when they are mixed, add the yogurt and the feta in pieces
- Cut the fresh herbs and add them together with the zucchini in the eggs mix. The mix should look like the one in the fotos. It shouldn’t have liquid. If you see liquid just add more flour or oat flakes.
- Add the sesame if you want
- Put it in a baking pan (mine was: 23x23cm) and bake it for 30 minutes.
